Caramelized Sugar Crunch Ham

Ingredients
- Farmland Heartland Ham*
- 2 cups sugar
- 1 1/2 teaspoons ground allspice
- 2 tablespoons butter
Preparation
Heat oven to 350o F. Place rack in 4-inch-deep half hotel pan; pour 2 cups water into bottom of pan. Place ham on rack; cover with parchment paper, then foil. Bake 2 to 3 hours until internal temperature reaches 130oF.
Prepare caramelized sugar when ham reaches 120oF. Combine sugar and allspice in heavy saucepan. Cook and stir over medium heat until sugar is completely melted. Remove from heat; stir in butter until melted.
Remove ham from oven; turn off oven. Slowly spoon caramelized sugar over surface of ham. Place back in warm oven, uncovered, for 10 minutes.
Serves: 25
Note:
If desired, ham can be sliced before pouring caramelized sugar over slices.
