Cider House Sweet Potato Soup

Ingredients
- 2 lbs. Farmland Cider House Breakfast Sausage Patties, diced
- 1 lb. sweet yellow onions, diced
- 1 lb. diced carrots
- 1/2 lb. diced celery
- 1 teaspoon minced garlic
- 3/4 cup flour
- 2 qts. chicken broth
- 1 cup apple cider
- 4 lbs. sweet potatoes, peeled and diced
- 2 teaspoons salt
- 1 teaspoon ground white pepper
- 2 cups half and half or heavy cream
- 1 1/2 lbs. shredded sharp Cheddar cheese
- 1/2 cup flour
Preparation
- Saute sausage, onion, carrots, celery and garlic in large stockpot until sausage is done and vegetables are tender. Stir in 3/4 cup flour; mix well. Slowly stir in chicken broth and cider.
- Add sweet potatoes, salt and pepper; bring to a boil. Reduce heat, cover and simmer 30 minutes or until potatoes are tender.
- Stir in half and half and heat until hot; do not boil.
- Remove soup from heat. Toss together cheese and 1/2 cup flour. Slowly add to hot soup, stirring until melted and soup is creamy.
Serves: 32 (1 cup)
