Cider House Sweet Potato Soup

Ingredients

  • 2 lbs. Farmland Cider House Breakfast Sausage Patties, diced
  • 1 lb. sweet yellow onions, diced
  • 1 lb. diced carrots
  • 1/2 lb. diced celery
  • 1 teaspoon minced garlic
  • 3/4 cup flour
  • 2 qts. chicken broth
  • 1 cup apple cider
  • 4 lbs. sweet potatoes, peeled and diced
  • 2 teaspoons salt
  • 1 teaspoon ground white pepper
  • 2 cups half and half or heavy cream
  • 1 1/2 lbs. shredded sharp Cheddar cheese
  • 1/2 cup flour

Preparation

  1. Saute sausage, onion, carrots, celery and garlic in large stockpot until sausage is done and vegetables are tender. Stir in 3/4 cup flour; mix well. Slowly stir in chicken broth and cider.
  2. Add sweet potatoes, salt and pepper; bring to a boil. Reduce heat, cover and simmer 30 minutes or until potatoes are tender.
  3. Stir in half and half and heat until hot; do not boil.
  4. Remove soup from heat. Toss together cheese and 1/2 cup flour. Slowly add to hot soup, stirring until melted and soup is creamy.

Serves: 32 (1 cup)
