Pork Carnitas

Ingredients
- 1 tablespoon kosher salt
- 1 tablespoon black pepper
- 1 tablespoon granulated garlic
- 1 tablespoon granulated onion
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground oregano (or 1 tablespoon dried oregano leaves)
- 1 cup vegetable oil
- 2 lb. Farmland® Fully Cooked Pork Ham Roast, cut into 1/2" cubes
Preparation
- To make carnita seasoning, combine first 7 ingredients; set aside.
- Heat oil in fry pan to 350°F. Fry cubed pork until pork until crisp on outside and an internal temperature reaches 140°F.
- Remove from oil, place in bowl and toss immediately with 1 tablespoon carnita seasoning. Cover and store leftover carnita seasoning at room temperature.
Notes: Serve with hot corn or flour tortillas and a side of pico de gallo. Carnitas goes great in a Chile Colorado or a Chile Verde sauce. Add 4 cups of your favorite sauce to seasoned carnitas. Bring to a boil, lower heat and simmer 10 minutes.
